Rhubarb Crumble Muffins
If you can’t find exactly what you are looking for on Cookidoo, you can always go old school and cook manually. There are many recipes already converted/written for the Thermomix that are available across the web. Alternatively, you can convert an old or new favourite recipe yourself.
I found this recipe a while ago on the FoodtoLove.co.nz website for Rhubarb Crumble Muffins. I have tweaked it a little to suit the ingredients that I had available, removing the toasted muesli and substituting flour. The converted recipe can be found below
Rhubarb Crumble Muffins

- Thermomix
Ingredients
Crumble
- 100 g Brown Sugar
- 85 g Plain Flour
- 75 g Butter Cold, cubed
Stewed Rhubarb
- 190 g Rhubarb cut into 2cm
- 55 g White Sugar
- 30 g Water
Muffin Mix
- 100 g Butter cubed
- 250 g Milk
- 150 g Brown Sugar
- 1 ea Egg
- 360 g Plain Flour
- 3 tsp Baking Powder
Instructions
- Preheat Oven to 180C and prepare a muffin tin
Crumble
- Add 100g brown sugar, 85g plain flour and 75g cold cubed butter to TM bowl
- Mix 10 sec, speed 6
- Remove crumble mix from TM bowl and reserve
- Clean TM Bowl
Stewed Rhubarb
- Add chopped rhubarb, 55g white sugar and 30g water to TM bowl
- Cook 10 minutes, 100C, reverse, soft spoon speed
- Remove stewed rhubarb from TM bowl and allow to cool for a few minutes
- Clean before making muffin mix - optional
Muffin Mix
- Add 100g chopped butter to TM bowl
- Melt butter 1 minute, 50C, speed 4
- Add milk, egg and 150g brown sugar to TM bowl
- Mix 10 seconds, speed 3, reverse
- Scrape down TM bowl and add 360g plain flour and 3 tsp baking powder to TM bowl
- Mix 15 seconds, speed 3, reverse
- Scrape down TM bowl, combining any unmixed flour with spatula
Muffins
- Half fill prepared muffin pan with muffin mixture
- Spoon a small amount of rhubarb into centre
- Top with remaining muffin mixture
- Sprinkle over crumble mixture
- Bake muffins for 20 minutes
