After all the years I have been using the Thermomix, I still pick up new information by browsing through the cookbooks.
Carrot Cake Bliss Balls
One of the recipes out of this collection that I have made a few times and is liked by even the fussiest in my household is the Carrot Cake Bliss Balls. This is a great recipe to use up any coconut pulp that you may have dried/frozen after making Thermomix Coconut Milk in your TM31, TM5 or TM6. It is a recipe that only takes a couple of minutes to make and holds well for a few days in the refrigerator. If you are using leftover dried or dehydrated coconut pulp, add a couple of extra dates to the mixture to ensure that it is moist enough to hold together when rolling.
A small ice cream scoop is great to use to portion out the bliss balls (or in fact any bliss balls). I like to use a Number 30 Bonzer or Natisco scoop as they are sturdy and long lasting. The number refers to the number of portions that the scoop will do…in the case of a Number 30, the bowl diameter is 46mm and holds 33ml or grams. That works out to around 1.5 tablespoons. When rolling the actual balls, I’ve found that slightly damp hands or even a little oil, helps to stop the mix from sticking and gives a better round shape.
